We’ve been trying. We’ve stopped buying cereal, buy corn chips instead of regular potato chips and got rid of the candy jar, but it’s still hard to make healthy choices sometimes. I find myself craving something sweet, salty and crunchy fairly often. Yes, I’ve given in. Have you ever heard of a junk food run?
I’ve always known nuts were a healthy snack, so I loaded up a few bags at the bulk food store to try and curb my cravings. While I do love nuts, the plain ones just don’t satisfy. So, I did a little experiment with the sweetener in my Homemade Granola, and it worked! I’ve made the best homemade honey roasted nuts ever!
Now, I don’t feel too bad about munching these little gems between meals; maybe it’s more like gobbling. Oh well, at least I know they don’t have any ingredients in them that I can’t pronounce, right?
I’m hoping that my daughter will make these enough times with me that when she gets a little older she can make them all by herself. It is just so easy and it costs a lot less than buying them at the store.
For my honey roasted nuts, I used a mixture of raw almonds, raw cashews, and unsalted roasted peanuts.
My sweetener was butter, honey, and brown sugar. I made a double batch this time because the first time I made them there just wasn’t enough!
- 3 cups of nuts
- 2 tbs butter or oil
- 3 tbs sweetener of your choice
- ½ tsp Kosher salt to taste
- ½ tsp Sugar to taste
- Prepare a baking pan with parchment paper and preheat the oven to 325.
- If using butter, melt it in a separate bowl or measuring cup and mix in your sweetener.
- Place your nuts in a bowl and pour sweetener mixture on top, mixing thoroughly.
- Spread them on the prepared baking pan and bake for 10 minutes. Remove them from the oven, stir, and bake them for 10 minutes more or until golden.
- Remove and immediately pour them into a bowl and stir or they will stick together in chunks. Toss them with salt and sugar to taste and allow them to cool completely before storing them in an air-tight container.
You can also try adding spices to the nuts before baking them. Cayenne or cinnamon would be nice.
Next time, I might try using coconut oil. If you end up doing it before me, leave a comment and let me know how they turned out.

I tried them, but they ended up burning. The second 10 minutes may be too long or it could have been that my rack was just too low. Check and stir them the second time after 5 minutes. I did manage to salvage a few to get a taste and they were good.

Yum!! I made these for my toddler to take in his lunch to preschool, but between him and my husband, they didn’t make it through the weekend. (I did honey with the butter and sprinkled with sea salt after baking.)

You mention brown sugar in your blog, but not in the actual recipe and directions. The picture also shows a much thicker glaze than just honey and butter. How much brown sugar is meant to be included in the glaze? They look scrumpy!

I think I just estimated. Maybe 1/4 a cup or a little less if you are using honey too.

SO IN THE recipe when it calls for sugar is that supposed to be brown sugar? So like honey, butter, and brown sugar?

So you choose 3 tbs of sweetener of your choice and then the 1/2 tsp of sugar (like raw granulated) is for the top when they come out of the oven, but that is optional.

I made these yesterday, but I did not add salt or sugar, instead I added 2 tsp salt free Cajun spice to the butter and honey mix before pouring it over the nuts. I have had rave reviews from all who have tried them. The next time I make them I am going to try baking them in small muffin cups to form small clusters. I will report back with the results.
