										<content:encoded><![CDATA[<p>I was 14 and eating dinner at my boyfriends house for the first time.  His dad got home late from work and sat down at the table.  My boyfriend introduced him to me and as he dished up his plate, he talked excitedly with me like I was a family member he hadn&#8217;t seen in a while.  I liked his personality instantly.</p>
<p>Suddenly he stopped and looked around the table.  &#8220;Where did all the mashed potatoes go?&#8221;  Slowly, all eyes at the table moved to me.  Mashed potatoes were my favorite!  When my boyfriend&#8217;s mom said &#8220;Take all you want,&#8221; I took her seriously!</p>

<p style="text-align: left;">These potatoes are creamy, rich, and full of flavor.  Just remember not to eat all of them until everyone has had their fair share.  It&#8217;ll be hard to resist!</p>
<h2 style="text-align: left;">Easy Garlic Mashed Potatoes Recipe</h2>
<p><strong>Ingredients:</strong></p>
<p>8-9 Medium Bakers Potatoes peeled and cut into large chunks (Preferably <a href="https://www.trueaimeducation.com/2013/02/booking-across-the-usa-idaho.html">from Idaho </a><img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f609.png" alt="😉" class="wp-smiley" style="height: 1em; max-height: 1em;" /> )</p>
<p>3-4 Cloves Garlic</p>
<p>3 Tablespoons Butter</p>
<p>1 Cup Chicken Broth</p>
<p>3/4 Cup Sour Cream or 1/2 Cup of Milk</p>
<p>Salt and Pepper</p>
<p><strong>Directions:</strong></p>
<p>Place the cut potatoes and garlic in a large pot and fill with water until the potatoes are just covered.  Cover and bring to a boil.  Cook for 25-35 minutes or until you can break them up with a fork.  Drain them in a colander.</p>

<p>Return the pot to the heat and add the butter to melt.  Warm the chicken broth in the microwave for 1 minute.  Put the potatoes back in the pot and add the chicken broth.  Mash with a potato masher or recruit a strong helper.</p>

<p>I like my potatoes nice and creamy so I whip mine with a hand mixer, or let my trusty helper do it.  Audrey wasn&#8217;t to sure about doing it all by herself, but I assured her that the mixer wasn&#8217;t alive <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

<p>Add your sour cream or milk, salt and pepper, and mix again.  Add extra chicken broth or milk to make them as creamy as you would like.</p>

<p style="text-align: left;">Recently, we&#8217;ve made it a priority to include more vegetables in our diets.  This is the perfect way to do just that!  Plus, rice is such an easy dish for children to learn to cook by themselves.  So, I can provide a nutritious side-dish while teaching my daughter how to cook!</p>
<p style="text-align: left;"><b>Ingredients</b><strong>:</strong></p>
<p style="text-align: left;">4 Cups of Liquid &#8211; I use 2 cups water and 2 cups of low-sodium chicken broth</p>
<p style="text-align: left;">2 Tbls Butter (optional)</p>
<p style="text-align: left;">2 Cups of White Rice</p>
<p style="text-align: left;">1 Cup of Veggies &#8211; I use 1/2 cup of red bell and 1/2 cup of frozen broccoli</p>

<h2>How to Make 20 Minute Easy Veggie Rice</h2>
<p>First, place a large pot over high heat and pour your liquids in.  I&#8217;ve used a variety of different broths based on what I had on hand at the time.  You can simply use water, but I like the extra flavor the broth adds.</p>

<p style="text-align: left;">Next, add in some butter.  This helps the rice from sticking to the bottom of the pan and gives it a rich flavor, but is totally optional.</p>

<p style="text-align: left;">When your liquid comes to a boil, add in your rice and cover.  Reduce the heat to Low and cook for 12 minutes.  Add in your veggies and cook for 5 more minutes.</p>
