<p>So why is this so good?  Bacon is a good answer and then there is that make ahead factor.  Cooking this casserole ahead of time or even freezing it for another day makes it perfect for hectic nights.  Plus, it is a large portion so big families and people who like left overs will appreciate it.  I like to use some of it to make potato pancakes.  Just add a little egg to make patties and pan fry those babies until crispy.</p>

<p dir="ltr"><span style="line-height: 1.5em;">Easter is a big deal in my family.  We take the whole day to celebrate and reflect on all our blessings, new and old.  No, we don&#8217;t have a big fancy meal, but we do get together with friends and family and share an intimate pot-luck.  Is there such a thing?  Haha!   </span></p>
<p dir="ltr">It&#8217;s a lot of fun, but sometimes bringing a dish to the Easter get together is tricky.  You see, I&#8217;m in church all morning.  Easter dinner is around 3 or 4, but the kids can&#8217;t wait that long for something to nibble on.  So I fix up what sort of resembles a lunch and then have little time to prep for the pot-luck.  That&#8217;s why I love making this Macaroni Casserole ahead of time and Kraft&#8217;s new <a href="http://see.walmart.com/kraftfoods?cid=cob.512.5198.1913" target="_blank" rel="nofollow">Fresh Take</a> makes it even easier!</p>

<p dir="ltr">The best part about making this ahead of time; I can recruit my daughter to help.  We all know that cooking with our kids can extend the meal preparations a little.  But the lessons learned are well worth the time.  Since we cook together quite often, my daughter is very confident in the kitchen and loves to make breakfast all on her own.  We go through the whole process together; from Walmart to the table.</p>

<p dir="ltr">At the store Audrey kept asking, &#8220;What are we going to cook mom?&#8221;  I didn&#8217;t want to tell her there, lest she start jumping up and down, squealing like she sometimes does when I cook her favorite things.  And she loves my baked Macaroni!  Every time I try to cook the stuff from the box she protests, &#8220;What is this!?&#8221;  So she was delighted when I told her what she was helping me with.  I gave her the responsibility of the topping.</p>

<p dir="ltr">Although Audrey can&#8217;t help with every aspect of this recipe, I still try to explain as much as I can about what I&#8217;m doing.  Using words like boiling, tender, preheat etc.; I take the opportunity for a little vocabulary lesson.  Who needs books right?</p>

<p style="text-align: left;">I should really make two pans so I can have some more leftovers!  This stuff gets eaten like candy at my house.  So, if you like leftovers or making freezer meals, this is a great recipe to double or even triple.</p>
<h2 style="text-align: left;">Easy Homestyle Shepherd&#8217;s Pie Recipe</h2>
<p><strong>Ingredients:</strong></p>
<p>3 Cups <a title="Cooking with Kids: Easy Garlic Mashed Potatoes" href="https://www.trueaimeducation.com/2013/11/easy-garlic-mashed-potatoes.html">Mashed Potatoes</a></p>
<p>1/2 Lb Ground Turkey or Beef</p>
<p>3 Carrots Chopped</p>
<p>1/2 Onion chopped</p>
<p>1 Tablespoon Butter or Oil for sauteing (optional)</p>
<p>1 Medium Zucchini chopped (Optional)</p>
<p>2 Tablespoons Worcestershire Sauce</p>
<p>4 Tablespoons Tomato Paste</p>
<p>1 Cup Beef or Chicken Broth warmed in the microwave</p>
<p>1 Teaspoon Brown Sugar</p>
<p>1/4 Teaspoon Thyme</p>
<p>1/4 Teaspoon Steak Seasoning (Optional)</p>
<p>1/2 Cup Frozen Peas</p>
<p>1/2 Cup Frozen Corn</p>
<p>Salt and Pepper to taste</p>
<p>1 1/2 Cup Grated Cheddar Cheese</p>
<p><strong>Directions:</strong></p>
<p>Prep:  This meal takes some chopping and prep work, but if you enlist a helper to peel and chop for you, it&#8217;s a breeze.  My daughter likes to help me peel the carrots and if I&#8217;m making the <a title="Cooking with Kids: Easy Garlic Mashed Potatoes" href="https://www.trueaimeducation.com/2013/11/easy-garlic-mashed-potatoes.html" target="_blank">mashed potatoes</a> at the same time, she helps peel those too.</p>

<p style="text-align: left;">Unless I&#8217;m in a hurry, I like to have my daughter help with the chopping to develop more confidence with a knife.  She is young, so I help cut the carrots into chunks and she finishes the job; cutting them into smaller pieces.</p>

<p>Preheat your broiler to low if you are eating the Shepherd&#8217;s pie immediately.  Place a heavy pan with a lid on medium high heat and start cooking the ground meat and carrots.  Cover and cook for 7 minutes stirring and breaking up the meat occasionally.</p>
<p>Add the onions and cook until they are soft; about 5 minutes.  If you are using ground turkey, you might have to add a tablespoon of butter or oil so the onions can caramelize and not stick to the pan.</p>
<p>Next, add the zucchini, worcestershire sauce, tomato paste, and warm broth.  Stir until combined and season with thyme, steak seasoning, salt and pepper.  With the lid off, cook for 5-10 minutes or until the sauce has thickened slightly.</p>

<p>Stir in the frozen veggies and cook until it simmers.  Then turn of the heat and put your meat sauce in a 11&#215;13 inch pan.  Top with mashed potatoes and cheese and place under the broiler until the cheese is golden and bubbly.</p>
<p>If you want to cook this later or put it in the freezer, don&#8217;t put it under the broiler.  Just cover with foil and put in the refrigerator or freeze.  When you&#8217;re ready to cook, preheat the oven to 375 and cook for 30 minutes (60 min. if frozen) remove the foil and cook for 10 minutes more or until the cheese is golden and bubbly.</p>
<p>This is why I need to double the recipe.  My little man eats just as much of it as I do!  That&#8217;s how I know it&#8217;s good.</p>
