Brown Rice Sweet and Sour Stir Fry |

This delicious stir fry with brown rice and sweet and sour sauce is healthy, balanced, and costs less than $1 per serving!
- 2 cups water
- 1 cup brown rice
- 1 tbsp oil of your choice
- 1-2 chicken breasts (or whatever protein you would like to add)
- 1 lb vegetables of your choice
- ½ cup chicken broth
- ¼ cup soy sauce
- 2 tbsp apple cider vinegar
- 1 tbsp brown sugar
- ½ tsp red pepper flakes
- Get your brown rice cooking. Boil the water and then add your rice. Reduce the heat, cover, and simmer for 30 minutes.
- Cut the chicken breast into bite-sized pieces. Add 1 tbsp of oil to a pan on medium heat and add the chicken. Stir occasionally until fully cooked. Do not drain. Put aside.
- While the chicken is cooking, make the sweet and sour sauce by mixing the chicken broth, soy sauce, cider vinegar, brown sugar, and pepper flakes in a small bowl.
- Add 1 lb of vegetables to the pan, cover, and stir occasionally until tender.
- Add the chicken and sweet and sour sauce to the pan and stir until thoroughly mixed and heated through.
- Add the cooked rice to the pan, stir for a minute or two, and serve.
