Brown Rice Sweet and Sour Stir Fry

This delicious stir fry with brown rice and sweet and sour sauce is healthy, balanced, and costs less than $1 per serving!
Ingredients
  • 2 cups water
  • 1 cup brown rice
  • 1 tbsp oil of your choice
  • 1-2 chicken breasts (or whatever protein you would like to add)
  • 1 lb vegetables of your choice
  • ½ cup chicken broth
  • ¼ cup soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • ½ tsp red pepper flakes
Instructions
  1. Get your brown rice cooking. Boil the water and then add your rice. Reduce the heat, cover, and simmer for 30 minutes.
  2. Cut the chicken breast into bite-sized pieces. Add 1 tbsp of oil to a pan on medium heat and add the chicken. Stir occasionally until fully cooked. Do not drain. Put aside.
  3. While the chicken is cooking, make the sweet and sour sauce by mixing the chicken broth, soy sauce, cider vinegar, brown sugar, and pepper flakes in a small bowl.
  4. Add 1 lb of vegetables to the pan, cover, and stir occasionally until tender.
  5. Add the chicken and sweet and sour sauce to the pan and stir until thoroughly mixed and heated through.
  6. Add the cooked rice to the pan, stir for a minute or two, and serve.
