  • 1 tsp Dried Basil
  • ¾ cup Warm Water
  • 5 Russet Potatoes
  • 2 tbs Olive Oil
  • 2 tbs Seasoned Salt
  • 1 tbs Basil
  • 3 tbs Flour
  • Salt and Pepper to Taste
  1. Place the onion and garlic in a medium bowl or large cup and sprinkle with basil.
  2. Warm up the vinegar in the microwave for 1 minute and mix in the sugar and salt until dissolved.
  3. Pour the mixture over the onions and add water until just covered.
  4. Let the onions sit out at room temperature for 4-6 hrs and then place in the refrigerator overnight.
  5. For the potatoes: Cut each potato in half lengthwise and then each half in three pieces.
  6. Place potatoes in a large bowl and cover tightly with a lid or plastic wrap. Microwave for 3-4 minutes or until the edges are translucent.
  7. Coat with olive oil, seasoned salt, basil and flour being careful when you stir not to break the potatoes.
  8. Grill for 4-5 minutes on each side or until tender. Season with salt and pepper. Alternatively you can bake at 450 degrees for 15-20 minutes or until golden.
