Pickled Onions and Grilled Potatoes |

Sweet, sour, and spicy; adds a kick to sausages, hamburgers, tacos and more! The potatoes are crispy and lightly seasoned to compliment any grilled recipe.
- 1 Large Red Onion thinly sliced
- 2 Cloves of Garlic Minced
- ½ cup White Vinegar
- 2½ tbs Sugar
- 1 tsp Kosher salt
- 1 tsp Dried Basil
- ¾ cup Warm Water
- 5 Russet Potatoes
- 2 tbs Olive Oil
- 2 tbs Seasoned Salt
- 1 tbs Basil
- 3 tbs Flour
- Salt and Pepper to Taste
- Place the onion and garlic in a medium bowl or large cup and sprinkle with basil.
- Warm up the vinegar in the microwave for 1 minute and mix in the sugar and salt until dissolved.
- Pour the mixture over the onions and add water until just covered.
- Let the onions sit out at room temperature for 4-6 hrs and then place in the refrigerator overnight.
- For the potatoes: Cut each potato in half lengthwise and then each half in three pieces.
- Place potatoes in a large bowl and cover tightly with a lid or plastic wrap. Microwave for 3-4 minutes or until the edges are translucent.
- Coat with olive oil, seasoned salt, basil and flour being careful when you stir not to break the potatoes.
- Grill for 4-5 minutes on each side or until tender. Season with salt and pepper. Alternatively you can bake at 450 degrees for 15-20 minutes or until golden.
